Time: 30 Minutes Serves: 4
2 Ripe Bananas
1 Cup of Frozen Berries of Choice (or Fresh)
4 Free Range & Organic Eggs
1/2 Tsp Baking Soda
1 & 1/2 Tsp Cinnamon or Apple Pie Spice (either is good)
1/8 C. Coconut Oil (melted)
1/2 C. Coconut Flour or Shredded Coconut
1. Preheat Oven to 400 degrees.
2. Blend your bananas into a thick puree.
3. Mix all ingredients into a bowl until thick (if too thick add a bit more oil or coconut milk).
*Note: I would add the Blueberries last so they keep more of there shape.
4. Place into muffin tins and bake roughly 10-15 minutes or until baked throughout.
